Incredibly easy and creative, these Halloween matcha cookies will surely catch everyone’s eyes at your Halloween party. Matcha has a bit of an earthy taste that balances beautifully in these sugar cookies and brings out the best flavors.
Preheat your oven to 350 F / 180 C and line your baking tray with parchment paper and keep aside.
Mix the dry ingredients: flour, baking powder, salt, and Matcha tea powder in a large bowl and keep aside.
In a stand mixer (you can also use the hand mixer for this) add in the butter, and sugar and beat it at medium speed, scraping down the sides for at least 2-3 min or until the mixture is creamy.
Add in the egg and vanilla extract and beat until everything is incorporated well.
Add the flour mixture to the butter mixture in batches and mix till the dough is formed (the dough should pull away from the sides of the bowl).
Flatten the dough to form a disc and wrap it with a cling wrap and refrigerate for at least an hour or overnight
Once chilled, roll out the dough on a lightly floured surface to 1/4 inch thickness and cut out round shapes with a 2-½ inch or 3-inch cookie cutter.
Place the cut-outs on the prepared baking tray and bake for 11 - 12 min in a preheated oven.
Press the candy eyes immediately once they are out of the oven. Push them a little into the cookies so they melt a little bit and stick themselves. You can place the candies as you like! (See notes)

Notes
Parchment paper works well, but a silpat mat works well too.
Use good quality matcha powder for the proper green color. You can also add 3-4 drops of green gel food color for a brighter shade.
For the Candy eyes - you can add them to the cookies before baking them but there is a risk of them melting completely in the oven. Another option is you can use a bit of any frosting or even melted chocolate and stick the candies on the baked and cooled cookies.
The number of matcha cookies will depend on how thick you roll the dough and the size of your cookie cutter.
